National Taco Day 2015 & Recipes!

A group of my friends and I planned out to celebrate national taco day, which was Sunday (10/4/15) by making some tacos and having some fun at the pool! I made a recap video blog about my day and it’s up on Youtube at my channel: @withjustjea. As promised on my video I’ll post up the recipes I’ve used in to making these tacos, and also making the cookie dough flautas!

CILANTRO & LIME SAUCE

This was so easy to make! Ingredients are:

  • 1 lime, juiced
  • 1 cup of mayonnaise or plain greek yogurt
  • salt & pepper
  • 1/4 of a cup finely chopped cilantro

Mix it all together and BOOM you got your awesome cilantro & lime sauce – which went great with the chicken and shrimp tacos.

BANG BANG SAUCE

  • Only two ingredients for this: sweet chili sauce & mayonnaise, almost 1:1 ratio. Mix it all in a small bowl. Trust me this sauce is addicting. Great for the shrimp, as dip, or use it for fried fish or chicken.

GUACAMOLE

Ingredients

  • 4 small avocados
  • salt & pepper
  • chopped red onions (1/2)
  • chopped tomatoes (2)
  • 1 lime, juiced

Mix it all in a bowl, I like my avocados chunky so I just chopped it first, but let the mixing do the gentle mashing.

PINEAPPLE MANGO SALSA

  • Chopped mangos
  • chopped pineapples
  • chopped tomatoes, red onion (1/2)
  • chopped tomatoes (2)
  • salt & pepper

Mix it all in a bowl!

TACOS

Assemble your tacos to your own perfection. For meats, my friends and I used chicken breasts, skirt steak and shrimp. All of it was seasoned simply with salt and pepper. We used whole wheat and corn tortillas. Make sure to warm up those flautas and tortillas first!

COOKIE DOUGH FLAUTAS

In order to tie in with the whole taco theme, I decided to make some cookie dough flautas (which reminded me of Tijuana Flats), but I just did it the quick and easy version.

Ingredients:

  • Ready made chocolate chip cookie dough — or you can make your own!
  • white flour tortilla
  • caramel sauce
  • fudge

Grab one tortilla. Place 3 table spoons of cookie dough in the middle of the tortilla. Fold the sides of the tortilla and roll it, like an egg roll. See picture below. Make as many cookie dough rolls as you want. Grab a skillet and heat up your canola oil. Fry the rolls until golden brown on both sides. After frying, place in a plate with paper towel to drip off excess oil.

Sauce: Get 2 tablespoons of fudge and 2 tablespoons of caramel and melt it in the microwave for 20-30 seconds. Drizzle or dip your cooked cookie dough flautas. Eat & enjoy!
